Leighton, a 59-year-old software delivery manager originally from Swansea who now lives in Surrey with his American partner, Eric, is one of the 12 hopefuls on the new series of 'The Great British Bake Off'.
He confessed that his journey to the famous white tent began with a spontaneous and 'drunken' application on New Year's Eve.
Known for his unique blend of traditional Welsh, British, and American flavors, Leighton says his favorite bakes include Welsh cakes with peanut butter and Victoria Sponge with key lime pie filling, a creation his partner's American family particularly enjoys.
The aspiring baker said he has always been his own person and ignored anyone who told him 'Boys don't bake'.
He also told the BBC that despite years of encouragement from his friends and family, he never thought he was good enough to land a spot on the show.
Having now met his fellow contestants, Leighton said he has 'never seen so many talented bakers' and found learning from them to be one of the best parts of the experience.
The first episode is set to air on Channel 4 on September 2, and Leighton promises viewers 'will be amazed' by what they see.
His story is a testament to the fact that sometimes, the biggest leaps in life are taken without a second thought, and that passion and talent can overcome self-doubt.
